Chinese Pancakes Recipe

Ingredients
For the first dough:
75g Flour
90g Boiling Water
For the second dough:
75g Flour
50g Cold Water
Instructions
1Combine the ingredients for the first dough until a sticky dough forms.
2Now combine the ingredients for the second dough, which you also mix into a dough.
3Now you work the two doughs together on a flour-dusted working surface to form one consistent dough. This might take some time(5-10 min.)
4Let the finished dough rest for 30 minutes, wrapped or covered.
5Now you roll out the pancakes, bake each side no longer than 30 seconds, put it into a damp towel and let it cool slightly, then split the double pancake in two by peeling off the top layer.
6After that you can fill them with all your favorite delicious fillings. Enjoy!
