Caribbean Chili Recipe

Ingredients
2 tablespoons coconut oil
1 onion, diced
1 green pepper, diced
3 Roma tomatoes, chopped
2 carrots, diced
5 ounces tomato paste
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
½ teaspoon cinnamon
½ teaspoon allspice
½ teaspoon dried oregano
½ teaspoon cayenne pepper
¼ teaspoon garlic powder
¼ teaspoon garlic, minced
¼ teaspoon ground black pepper
1 15-ounce can kidney beans, drained and rinsed
1 ear corn, kernels cut from the cob
Instructions
1Heat the oil in a large skillet over medium-high heat and add the onion and bell pepper. Sauté until the onion is translucent, about 10 to 15 minutes.
2Add the tomatoes, carrots, tomato paste, and ½ cup of water. Add the spices and herbs. Bring to a boil, cover, and turn down to simmer for 30 minutes.
3Add the kidney beans and corn. Cook on a low simmer for another 15 minutes.
