Super Creamy Winter Mushrooms soup with a secret ingredient Recipe

Ingredients

500g mushroom mix

2 leeks

2 medium potatoes

garlic

50g polenta

1lt vegetable broth or water

a splash of red wine

Instructions

1chop the garlic, the leeks, the potatoes and the mushrooms

2place the garlic and the leeks in a skillet with a splash of olive oil and stir fry for 6/7 min until soft and golden

3add the mushrooms, 1/2 glass of water, cover with a lid and cook for 10 min until the water is all absorbed

4add a splash of red wine, let it evaporate on high heat for 3/4 min

5add the potatoes, the veggie broth, the polenta and a pinch of salt, stir well, cover with the lid and let it cook for 20 min on low heat

6You can have the soup like this or blend it until you have a smooth, super creamy consistency
