Marble Cake Cookies Recipe

Ingredients
100g Vegan Butter
30g Peanut Butter
4tbsp Agave Syrup
50g Apple Sauce
180g Flour
1tsp Baking Powder
1/2tsp Baking Soda
¼ tsp Salt
1tbsp Cocoa Powder
60-80g Chopped Chocolate
Instructions
1First of you need to combine the vegan butter and peanut butter in a bowl and mix them well in your kitchen machine or using your hand held mixer, beat for about 2 min. until it gets nice and creamy.
2Add in 4tbsp agave or maple syrup and beat the mixture for another 2 min. Now add in 50g applesauce and quickly give it a mix.
3In a separate bowl combine the flour, baking powder, baking soda and salt. Add the dry ingredients to the butter mixture and mix until just combined into a fluffy dough.
4Scale the dough and separate it in half. Put one half aside into a separate bowl and put it in the fridge.
5Mix 1tbsp cocoa powder and some chocolate chunks into the other half of the dough, and put it in the fridge as well for about 30 minutes.
6After 30 minutes you're ready to heat up your oven to 170° (fan). Now take out your dough and measure about 15g of the white and 15g of the chocolate dough (you can either scale it or roughly guess) and roll them into one round cookie, press down a little an place on a lined baking tray. Repeat until you used up all your dough.
7Now you can decorate the cookies with some extra nuts and chocolate. After that, pop them in the oven and bake for about 12min. or until they are golden brown. Let them cool down and then enjoy!
