Vegan Pizza Grilled Cheese Sandwiches Recipe

Ingredients
3 cups Vegan Basil Ricotta (or store-bought vegan ricotta)
2 tsp Italian seasoning
8 slices focaccia bread (or a pizza crust cut into 8 slices)
1 cup marinara sauce
1 cup fresh basil leaves
additional pizza toppings, as desired
Instructions
1Heat a panini press (or a grill pan over medium heat).
2In a small bowl, combine the Homemade Vegan Ricotta and Italian seasoning. Stir well.
3Spread the Homemade Vegan Ricotta on four slices of bread. Spread marinara on the other four slices.
4On the slices with Homemade Vegan Ricotta, add a few basil leaves (and additional pizza toppings, if using) and top with one of the other bread slices coated with marinara.
5Place the sandwiches on top of the panini press. Cook for about 5 minutes until golden brown and crispy. (If using a grill pan, place the sandwiches inside and cook on each side for about 5 minutes until golden brown.)
6Repeat with the remaining sandwiches.
