Vegan Caesar Salad Recipe

Ingredients

For the Caesar dressing

1 cup raw cashews soaked in water for 4 to 8 hours, rinsed and drained

2 cloves garlic

2 tablespoons lemon juice

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

¾ to 1 cup water divided

Salt to taste

For the Caesar salad

4 cups Brussels Sprouts. finely chopped

parsley finely chopped

Vegan Parmesan cheese

Instructions

1Place the cashews, garlic, lemon juice, Worcestershire sauce, Dijon mustard and ¼ cup water in the bowl of a food processor. Mix

2Dilute with ½ to ¾ cup more water, too desired thickness.

3Season the vinaigrette to taste.

4Keep the excess vinaigrette in a container in the fridge.

5Place Brussels Sprout and croutons in a large bowl. Drizzle with vinaigrette, sprinkle with parsley and vegan Parmesan. Put in the fridge for 1 hour to allow the dressing to soften the Brussels sprouts.

6Serve as a side dish or main course.
