Fall Tofu Skillet Recipe

Ingredients
4 teaspoons extra-virgin olive oil divided
1 package 14 ounce block
1 onion chopped
1 tsp salt
½ tsp ground black pepper
½ cup apple juice
2 tsp Dijon mustard
2 apples cored and cut into ½-inch slices
2 teaspoons fresh thyme
Instructions
1Heat 2 teaspoons of oil in a large skillet over medium high.
2Sprinkle the top of the tofu slices evenly with salt and pepper. Once the oil is hot and shimmering, add the tofu and onion to the pan. Let cook 4 minutes, then flip the tofu and continue cooking for 4 additional minutes.
3In a small bowl or large measuring cup, stir together the apple juice and mustard.
4Add the apple juice mixture to the skillet, the thyme and the apples slices
5Cook for 10 minutes, until the apples are lightly tender and begin to turn golden.
6Serve warm, sprinkled with additional thyme as desired.
