By The Vegan Allrounder
🔪Prep Time: 25 minutes
👩🍳Cook Time: 30-40 minutes
Ingredients
4-5 pears
300g flour
1-2tbsp baking powder
20g cocoa powder
160g applesauce
250ml plantmilk
80g sugar/sugar replacement (or more if you’re a lil’ sweet tooth)
100g walnuts (finely crushed)
80-100g dark chocolate (melted)
1-2tbsp Apple cider vinegar
Instructions
1Preheat your oven to 180°C.
2Peel the pears (this step is optional, if you’re using organic pears you can leave the peel on), remove the pear core, and quarter each pear, after that cut each piece lengthwise to create fine scores. Put all the pear pieces into a bowl and drizzle with some lemon juice.
3Combine the flour, the cocoa powder, and the baking powder in a bowl. Set aside.
4In a separate bowl mix the plant milk, walnuts, applesauce, and sugar together until combined.
5Now sieve in the dry ingredients, add in the melted chocolate and whisk everything together until a nice and elastic batter forms.
6Pour the batter into a lined or greased baking tin, layer the pears on top, carefully pressing them into the batter.
7Bake the cake for 30-40 minutes (or until a toothpick inserted comes out clean). Let cool down a little and take out of the tin.
8Dust with icing sugar and serve with vegan whipped cream or some vanilla ice cream. Enjoy!
