Chocolate & sea salt flakes grissini Recipe

Ingredients
Poolish
50ml cold water
3g dried yeast
50g GF bread flour
GRISSINI
Poolish (as above)
250g GF bread flour
4g salt
2g dried yeast
140ml cold water
Chocolate pieces
Instructions
1Poolish: Measure the water and yeast into a bowl and mix together until the yeast has dissolved.
2Add the flour and stir until fully combined.
3Cover and leave at room temperature for 2 hours
4Dough: Preheat your oven to fan 230°C.
5Place the yeast to the water in a bowl, mix until dissolved, then pour in your poolish. Add the flour and salt and bring the mixture together to form a dough.
6Sprinkle your work surface with flour, then place your dough on it.
7Line a tray with baking paper, take your chocolate pieces and place them on the surface, then take walnut-sized pieces of dough and roll them into long thin sticks, absorbing the chocolate as you roll.
8Place them on the tray, brush with olive oil and season with salt.
9Place your tray in the oven and bake for 12 minutes, then pull from the oven and enjoy a true taste sensation!
