Banana bread muffins Recipe

Ingredients
3/4 (400g without the peel) ripe bananas
260g GF flour
6/7 large dates
16g GF baking powder
1 pinch of salt
1 teaspoon cinnamon (or more)
100g walnuts&almonds
3 teaspoons cornflour (+ 6 tablespoon water to make the vegan egg)
115g sunflower oil
Vanilla
Instructions
1Throw away the stones from the dates, then put them in a bowl with a splash of hot water so they get soft, and wait 5/10 min before using
2In a glass make the vegan egg by mixing 3 teaspoons of cornflour + 6 tablespoons of water and set aside
3Peel the banana, then get 2 thin slices from one of them, squeeze some lemon on the slices and set aside; smash the rest of the bananas in a bowl and set aside
4Add the vegan egg to the bananas and add the vanilla, mix well
5Add the oil and mix well
6Take your dates and dissolve them in the water, then pour them in the banana bowl
7Add the dry ingredients to the bowl: the GF flour, the baking powder, the salt and the cinnamon
8Add the chopped nuts and mix well
9Pour some drops of oil or some veg butter to lightly grease around the inside of the tin, then add some flour, move it around and pat away the excess
10Pour the banana batter inside the tin, then decorate with the pieces of the banana slices
11Bake at 175* in static oven for 50/60 min
