Red Potatoes & Oven Panelle Recipe

Ingredients
Potatoes
500g potatoes
2 teaspoons smoked paprika
1 teaspoon sea salt
1 teaspoon garlic granules
Extra virgin olive oil
Panelle
300g chickpea flour
600g water
2 tablespoons oil + to grease the panelle
1 teaspoon sea salt
Rosemary
Grounded peppercorn
1 teaspoon garlic granules
Instructions
1 Wash and cut the potatoes in even size wedges (with the skin and all)
2Put the wedges in a bowl and pour a bit of oil, then add the spices: the salt, the garlic and the smoked paprika. mix well until all the wedges are well coated.
3Move the wedges to a baking tray with baking paper in a single layer so they cook evenly
4Bake for 30 min at 200* in fan oven
5Panelle: Take a tall casserole and put the chickpea flour.
6Panelle: Add the water little by little to avoid lumps
7Panelle: Once you’re done with the water, add the salt, the chopped rosemary, the peppercorn and the garlic granules.
8Panelle: ut on high heat and cook for 5/6 min until it starts boiling; you’ll see the batter will become very thick, almost solid. Move from the heat and pour it on a sheet of baking paper.
9Panelle: Now, place another sheet of baking paper on top of the thick chickpea batter, and roll it to a 4mm thick layer.
10Panelle: Let it cool down, then cut in squares.
11Panelle: Move to a baking tray, grease with little oil and put in the oven with the potatoes for 10/15 min, until they’re golden and crunchy.
