Blueberry Banana Pancakes (Gluten-Free) Recipe

Ingredients

1/2 cup oat flour

1/4 cup gluten-free flour

1/2 tsp baking powder

1/2 tsp vanilla extract

1 large banana

1 tbsp maple syrup

1 large egg

1 large egg white

1/2 cup blueberries

Instructions

1Add the oat flour, plain flour, baking powder, vanilla extract, banana, maple syrup, egg and egg white to a blender or food processor. Blend until very smooth and no lumps remain.

2Heat a non-stick pan over a medium heat. Pour out around 2 tbsp batter per pancake onto the pan and add 3-4 blueberries to each pancake. Cook for 2-3 minutes.

3When a few bubbles form on the surface of the pancakes and they are crispy around the edges, flip and cook for a further 30 seconds-1 minute on the other side. Transfer to a plate and serve.
