No Bake Protein Peanut Butter Bars Recipe

Ingredients

For the Base

1 cup roasted, unsalted peanuts

1⅓ cup soft Medjool dates pitted

½ cup pure maple syrup

1 cup dry quick-cooking oats

½ cup coconut sugar

½ tsp vanilla extract

pinch pink salt

For the Topping

¼ cup pure maple syrup

1 cup soft Medjool dates

1 cup roasted, unsalted peanuts

2 tbsp refined coconut oil not virgin or extra-virgin

½ tsp vanilla extract

pinch pink salt

Instructions

1Blend together all base ingredients until a dough forms.

2Pat this medium-thick into a parchment lined baking tray.

3Next, blend together the topping ingredients until it becomes a sticky dough.

4Layer this on top of the base.

5Cut into 16 bars. Enjoy!
