Butterfly Pea Flower Tea Recipe Recipe

Ingredients
⅓ cup xylitol
⅓ cup of hot water
1 tsp butterfly pea powder
6-8 tbsp freshly squeezed lemon juice
4 cups water

Instructions
1To make the sugar syrup, add the xylitol (or white sugar), ⅓ cup water and butterfly pea powder to a saucepan over medium heat. Bring to a boil, constantly stirring, until sugar has dissolved. Then turn off the heat and allow it to cool. Once it has thickened into a syrup and has cooled down, you can use it in your drink. (If you use the sugar syrup while it is still very hot, it could make your glass crack with the temperature change of the hot syrup and the cold ice. It'll also melt the ice quicker).
2To prepare the drink, pour ice into 6 cups, along with water in each. Pour the sugar syrup over top and stir. This will make it blue!
3Now to make it purple, add in the lemon juice, 1 tsp at a time into each cup and stir. The more lemon juice, the more purple it will become. You can do it this in each cup separately if you want to control the color. Add all 8 tbsp of lemon juice, or use less if desired.
4If you don't want to keep some cups blue and some purple like I have in the pictures above, then you can fill a pitcher with ice, add all the 6 cups water, entire sugar syrup mixture and lemon juice in at once. Then pour into separate cups to add different levels of lemon juice in each. Make sure to only do this last step right when ready to serve, or the ice will melt.
5Give it a stir before serving and serve right away!
