Banana Bread Baked Oatmeal (Vegan) Recipe

Ingredients
2 cups gluten-free oats
2 tbsp coconut sugar
1/2 cup dairy-free chocolate chips
1/2 tsp salt
1/2 tsp cinnamon
2 tbsp peanut butter
2 large mashed bananas
1/2 cup vegan yoghurt, soy or coconut
2 cups plant based milk
1/2 tsp baking powder
Instructions
1Preheat the oven to 180 degrees C (350 F).
2Add the oats, coconut sugar, chocolate chips, salt, cinnamon, peanut butter, mashed banana, vegan yoghurt, plant based milk and baking powder to a mixing bowl and stir together well.
3Transfer the batter to a rectangular baking dish, adding extra banana coins and chocolate chips on top. Bake in the preheated oven for 25 minutes.
