Acadian Black Beans And Rice Recipe

Ingredients
1½ cups brown rice
3½ cups low sodium vegetable broth
1 tablespoon extra virgin olive oil
½ yellow onion, chopped
1 green bell pepper, chopped
2 15-ounce cans black beans, drained and rinsed
1 clove garlic, finely chopped
¼ cup diced tomatoes
1 teaspoon parsley
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon oregano
½ teaspoon cayenne pepper
¼ teaspoon ground black pepper
1 teaspoon salt
Instructions
1Cook the brown rice by any method you choose. I use a rice cooker. Cook the rice with vegetable broth for this recipe.
2In a large skillet, heat the oil to medium and then add the onion and bell pepper. Sauté until the onion becomes transparent, about 10 minutes. Add all the remaining ingredients (except the rice) to the large skillet with the onion and bell pepper. Cook for 10 minutes. Add the rice and heat through.
